I&#039;m currently not able to eat whey and Donna Gates of The Body Ecology Diet states, &quot;To get the most from your fermented foods, Body Ecology recommends that you do not use salt, even healthy sea salt, in the fermentation process. When salt is used, it inhibits the growth of the beneficial bacteria (microflora) -- a key reason we are eating the cultured vegetables.&quot;  I&#039;m at a loss for how to make cultured veggies, particularly the cultured beets you highly recommend without using salt....any suggestions?
