I have been brewing kombucha for 6 years now.

The dangers of contamination our really overstated. It's very easy to see if this happens and it is very rare. The story on the internet of the death has been disproven but it still floats out there.
Here are the benefits of kombucha.
anti-fungal, probiotic, relieves arthritic conditions, heals and restores digestion
powerful detoxyfier and weight-loss aid.
Based on my own personal exper. and my spouse's.

Yes, there's always a risk -- especially in home brewing under non-sterile conditions. Kombucha isn't a drink for thirst, and you probably shouldn't drink it like it was water; some suggest about a cup per day. Everything in moderation, say I.

Interesting find! I'd be interested in trying this myself (still attempting to make my own live yogurt, so one project at a time lol). The only note about this though is that there have been several case reports have suspected liver damage, metabolic acidosis and cutaneous anthrax infections relating to the use of Kombucha (though there have been no human based studies).
Then again as with any supplement, food, vitamin, herb etc, theres always a risk of some adverse affects in some.
